Cherie Soria is the Founder and Director of the Living Light Culinary Arts Institute in Fort Bragg, California. She is an outstanding chef and teacher of vegetarian and raw vegan cuisine. Dr. Ann Wigmore and Viktoras Kulvinskas encouraged Cherie to spread her gift of teaching to create chefs and teachers worldwide. The intent of the Living Light Culinary Arts Institute is to create a high standard of excellence for the certification of chefs and instructors of gourmet raw live cuisine. She has assisted thousands of people in becoming more aware of the effect food has on their physical, emotional, mental, and spiritual well-being.

Angel Foods: Healthy Recipes for Heavenly Bodies is a delightful book with a combination of cooked and uncooked vegan foods, so it is the perfect book for those who wish to transition to raw foods as well as those who want to incorporate more raw foods into their diets. The more than 240 recipes include appetizers, spreads, soups, salads, nut and seed cheeses, grains, main dishes, and desserts. She also includes valuable information about sprouting, kitchen equipment, ingredients, and resources. In Angel Foods Cherie answers many of the basic questions that most non-raw foodists ask.

I've only prepared the raw food recipes in this book, which I've found to be simple, inspired and delicious. I find that I often turn to Angel Foods for inspiration, sometimes following a recipe closely and, more often, taking the idea of the recipe and mixing the ingredients without measuring, or adapting the ingredients. It's as if I'm well-grounded in the Spirit of the book and author, and then find my way more easily to the dish I want to create.

Angel Foods is a heavenly book. Inspirational thoughts are sprinkled liberally with and by Angels who are beautifully brought to the pages to lift the Spirit. I've seen Cherie demonstrate her food knowledge and food preparation skills, both in person and on video.

Generous in spirit, Cherie shares her knowledge, including recipes, in her classes, teleconferences, and videos. As all effective teachers, she herself changes and learns and expands her wisdom. In her live classes, I have seen how she has improved on recipes in the book. I eagerly await her next book.
